Method
In a blender, combine the frozen peaches, lemonade, coconut water, honey (if using), and vanilla extract.
Blend on high until all the ingredients are smooth and slushy in texture. If the blend is too thick, add a bit more coconut water to achieve the desired consistency.
Taste the mixture and adjust sweetness by adding more honey/agave if needed, then blend again to combine.
Pour the slushie into chilled glasses.
Garnish with fresh mint leaves and a slice of lemon on the rim of each glass for an extra refreshing touch.
