Preheat the oven to 425°F (220°C).
In a medium saucepan over medium heat, combine the halved strawberries, sugar, lemon juice, and salt. Stir gently until the strawberries start to release their juices, about 3-4 minutes.
In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add this mixture to the saucepan, stirring constantly until the mixture thickens, about 2-3 minutes. Remove from heat and stir in the vanilla extract.
Pour the strawberry mixture into the pre-made pie crust, spreading it evenly.
Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the filling is bubbling.
Allow the pie to cool for at least 1 hour before serving to let the filling set.
Serve slices with a dollop of whipped cream on top if desired.
