Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the sliced peaches with 1/2 cup of granulated sugar, lemon juice, and cinnamon. Stir well and set aside for about 10 minutes to let the juices release.
In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of granulated sugar until well combined.
Pour in the milk, melted butter, and vanilla extract. Stir until just combined; it’s okay if there are a few lumps.
Pour the batter into a greased 9x13 inch baking dish, spreading it evenly across the bottom.
Carefully spoon the peach mixture over the batter. Do not stir; the peaches will sink during baking.
Sprinkle the brown sugar evenly over the top of the peaches, and if using, sprinkle nutmeg for extra warmth.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the edges are bubbling.
Remove from the oven and allow it to cool for about 15-20 minutes before serving.
