Instructions
In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
Add the ground turkey (or beef) to the skillet, breaking it up with a spatula. Cook until fully browned, about 5–7 minutes.
Stir in the taco seasoning, cumin, and paprika, ensuring the meat is evenly coated with spices. Season with salt and pepper to taste.
Add the black beans, corn, and diced tomatoes to the skillet. Stir well and let the mixture simmer for about 5 minutes, allowing flavors to meld.
In serving bowls, layer the bottom with a generous scoop of cooked brown rice.
Top the rice with the taco meat mixture, followed by diced avocado, shredded lettuce, and cheddar cheese.
Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
