In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground turkey or beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
Once the meat is cooked, drain any excess fat, and then stir in the taco seasoning according to package instructions. Add a splash of water if needed and mix well. Allow it to simmer for 2-3 minutes.
In a large mixing bowl, combine the cooked rice, black beans, corn, and diced tomatoes. Season with salt and pepper to taste.
In individual serving bowls, layer the rice mixture first, followed by the seasoned meat. Top with shredded lettuce and cheese, and finish with sliced avocado and chopped cilantro.
Serve each bowl with lime wedges to squeeze over the top for added zest.
