Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easier removal.
In a medium bowl, whisk together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt. Set aside.
In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with the eggnog. Begin and end with the dry ingredients, mixing until just combined.
If using, fold in the chopped nuts for added texture.
Pour the batter into the prepared baking pan and spread it evenly.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cookie bars to cool in the pan on a wire rack. Once cooled, cut them into squares.
If desired, top with a dollop of whipped cream for that extra festive touch.
Notes
For a festive presentation, dust with powdered sugar and garnish with nutmeg or a cinnamon stick.
