In a large skillet, heat sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
Stir in the coleslaw mix, soy sauce, rice vinegar, and sriracha (if using). Cook for another 3-5 minutes, until the cabbage is slightly wilted but still crunchy.
Season with salt and pepper to taste. Stir well to combine all the flavors evenly.
Remove from heat and sprinkle sliced green onions over the top for freshness.
Serve hot, garnished with sesame seeds.
