Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the sliced chicken, bell peppers, and onion.
Drizzle the olive oil over the mixture and sprinkle with chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss the ingredients until well coated.
Spread the seasoned chicken and vegetables evenly on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the veggies are tender. Stir halfway through cooking to ensure even roasting.
While the fajitas are baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable.
Once cooked, remove the fajitas from the oven, and serve them warm. Fill each tortilla with the chicken and vegetable mixture.
Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the top.
