Method
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the sliced peaches with lemon juice, 1/2 cup of sugar, and ground cinnamon. Toss well until the peaches are evenly coated. Set aside.
In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
Gradually pour in the milk and melted butter into the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
Pour the batter into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
Spoon the peach mixture over the batter, pouring any juices on top as well. Do not stir; the batter will rise around the peaches as it bakes.
Bake in the preheated oven for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cobbler to cool slightly before serving.
