Method
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the diced onion and sauté for 2-3 minutes until translucent.
Stir in the minced garlic, cooking for another 30 seconds until fragrant.
Add the mixed vegetables to the skillet and cook for about 3-4 minutes, stirring frequently.
Push the vegetable mixture to one side of the skillet, then pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix everything together in the pan.
Add the cooked jasmine rice to the skillet, breaking up any clumps. Pour in the soy sauce, citrus zest, and fresh citrus juice. Stir well to combine all the ingredients.
Cook for an additional 3-5 minutes, allowing the rice to crisp slightly at the bottom (optionally, you can use a lid to steam the rice a little).
Season with salt and pepper to taste, adjusting the flavors as desired.
Stir in the sliced green onion just before serving.
