Instructions
In a skillet over medium heat, brown the ground beef or Italian sausage until fully cooked. Drain excess fat and set aside.
In a large bowl, combine the ricotta cheese, beaten egg, oregano, basil, salt, and pepper. Mix until smooth.
Spread a thin layer of marinara sauce at the bottom of the crockpot to prevent sticking.
Layer the broken lasagna noodles over the sauce, followed by half of the cooked meat, and then half of the ricotta mixture.
Sprinkle one cup of mozzarella cheese on top.
Repeat the layering process with the remaining noodles, marinara sauce, meat, ricotta mix, and the final cup of mozzarella cheese.
Top with grated Parmesan cheese to finish.
Cover the crockpot and cook on low for 4-6 hours or until the cheese is melted and the noodles are tender.
Once done, let it sit for 10-15 minutes before serving to allow it to set.
Notes
Serve slices directly from the crockpot, garnished with fresh basil or parsley, and accompanied by a side salad and crusty bread for a complete meal.
