Prepare the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick.
Set Up Dredging Stations: In three shallow dishes, place the flour in the first bowl, beaten eggs in the second, and mix breadcrumbs, grated Parmesan, garlic powder, oregano, basil, salt, and pepper in the third bowl.
Coat the Chicken: Dip each chicken breast into the flour, shaking off excess. Then, coat in the beaten eggs before finally pressing into the breadcrumb mixture until well coated.
Fry the Chicken: In a large skillet, heat olive oil over medium heat. When the oil is hot, add the chicken and cook for about 4-5 minutes per side or until golden brown. You may need to do this in batches to avoid overcrowding the pan. Transfer the fried chicken to a paper towel-lined plate to absorb excess oil.
Assemble the Bake: Spread 1/3 cup of marinara sauce on the bottom of a baking dish. Place the fried chicken breasts on top of the sauce. Spoon more marinara sauce over each chicken piece, then sprinkle shredded mozzarella cheese evenly over the top.
Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden and the chicken is cooked through.
Garnish and Serve: Remove from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves before serving.
