In a large bowl, combine the sliced chicken, olive oil, minced garlic, chili powder, cumin, smoked paprika, lime juice, salt, and pepper. Toss until the chicken is well coated.
Heat a large skillet over medium-high heat. Once hot, add the marinated chicken. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden and cooked through.
Remove the chicken from the skillet and set aside on a plate. In the same skillet, add the sliced onions and bell peppers. Sauté for about 5 minutes until they are tender and slightly charred.
Return the chicken to the skillet with the vegetables and stir to combine. Cook for an additional 2-3 minutes to warm everything through and meld the flavors.
Warm the tortillas in another skillet or microwave until soft.
Assemble the fajitas by placing a generous amount of the chicken and vegetable mixture on each tortilla. Top with your choice of sour cream, guacamole, shredded cheese, and salsa before folding or rolling up.
