Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
Cook the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning.
Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from skillet, let rest for a few minutes, then slice into strips.
Make the Alfredo Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer.
Gradually stir in the grated Parmesan cheese, mixing until the sauce thickens and becomes creamy. Season with additional salt and pepper to taste.
Combine Pasta and Chicken: Add the cooked fettuccine to the Alfredo sauce and toss until well combined. Incorporate the sliced chicken, gently tossing to evenly distribute.
Serve: Plate the Chicken Alfredo and garnish with fresh parsley for a pop of color.
