Preheat your air fryer to 375°F (190°C) for about 5 minutes.
In a small bowl, mix the brown sugar, cinnamon, and a pinch of sea salt together.
Place the peach halves in a bowl and drizzle the melted butter and honey over them. Toss gently until the peaches are evenly coated.
Sprinkle the brown sugar mixture over the peaches, ensuring it covers the cut sides well.
Arrange the peaches, cut side up, in the air fryer basket in a single layer. You may need to air fry them in batches if your air fryer is small.
Air fry the peaches for 10-12 minutes, checking for tenderness. The peaches should be soft and caramelized on top.
Remove the peaches from the air fryer and drizzle with vanilla extract for added flavor.
Serve warm, garnished with fresh mint leaves if desired. Pair with your favorite ice cream or yogurt for an indulgent treat!
