Preheat your oven to 425°F (220°C).
Wash and scrub the russet potatoes. Cut them into fry-shaped pieces (about 1/4 inch thick).
In a large bowl, toss the cut potatoes with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 30-35 minutes or until crispy and golden brown, flipping halfway through.
While the fries are baking, warm the cooked ground beef or turkey in a small saucepan over medium heat. Season with salt and pepper to taste.
Once the fries are done, remove them from the oven. Immediately sprinkle the shredded cheddar cheese evenly over the hot fries. Return to the oven for an additional 5 minutes, or until the cheese has melted.
Once out of the oven, top the loaded fries with warm ground beef, sour cream, diced green onions, and sliced jalapeños.
If desired, drizzle hot sauce over the top for an extra kick.
Serve immediately and enjoy the cheesy, meaty goodness!
