In a large mixing bowl, combine the ground beef, garlic powder, onion powder, smoked paprika, black pepper, and salt. Gently mix until well combined; be careful not to overwork the meat.
Divide the mixture into four equal portions and shape them into patties, making a slight indentation in the center of each patty. This helps prevent the burgers from puffing up while cooking.
Preheat your grill or skillet over medium-high heat. Place the patties on the grill and cook for about 4-5 minutes on one side.
Flip the patties and add a slice of Irish cheddar cheese on top of each patty. Cook for an additional 3-4 minutes, or until the cheese is melted and the burgers reach your desired doneness (preferably medium).
While the burgers are cooking, melt a little butter in a separate skillet over medium heat and toast the brioche buns until golden brown.
To assemble the burgers, spread a layer of creamy Irish mustard on the bottom half of each toasted bun.
Place the cooked and cheesed burger patty on top, followed by a slice of tomato, crispy bacon, a good scoop of caramelized onions, and a handful of arugula or butter lettuce.
Top with the other half of the bun and secure with a toothpick if needed.
