Prepare the Peanut Butter Filling: In a medium bowl, mix together the creamy peanut butter, powdered sugar, vanilla extract, and a pinch of sea salt until well combined. Set aside.
Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until smooth and fully melted.
Create the Chocolate Shells: Line a muffin tin with paper liners. Pour a small amount of melted chocolate into the bottom of each liner (about 1 tablespoon), and use the back of a spoon to spread it evenly across the bottom.
Add the Peanut Butter Filling: Take about 1 tablespoon of the peanut butter mixture and place it on top of the chocolate layer in each liner. Press down gently to flatten.
Top with More Chocolate: Pour more melted chocolate over the peanut butter filling to completely seal the cups (about 1 tablespoon on top). Use a spatula to smooth it out evenly.
Chill: Place the muffin tin in the refrigerator for at least 30 minutes to allow the chocolate to harden completely.
Serve: Once set, remove the peanut butter cups from the muffin tin and peel off the wrappers. Enjoy your homemade peanut butter cups!
