In a large mixing bowl, combine the diced cucumbers and tomatoes.
Add the crumbled feta cheese and thinly sliced red onion to the bowl.
In a small bowl, whisk together the olive oil, red wine vinegar (or apple cider vinegar), salt, pepper, dried oregano, and lemon zest until well combined.
Pour the dressing over the cucumber and tomato mixture.
Gently toss the salad until all the ingredients are evenly coated with the dressing.
Fold in the chopped parsley for an added fresh flavor.
