2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh, frozen, or canned)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon pepper

1 cup chicken broth

1 tablespoon lime juice

Fresh cilantro, for garnish

Sliced avocados, for serving

Instructions
 

Place the boneless chicken breasts at the bottom of the crockpot.

    In a mixing bowl, combine the black beans, diced tomatoes (with their juice), corn, diced onion, and minced garlic. Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well.

      Pour this mixture over the chicken in the crockpot.

        Add the chicken broth and lime juice on top of the mixture.

          Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

            Once cooked, use two forks to shred the chicken inside the crockpot and mix it well with the other ingredients.

              Taste and adjust seasoning, adding more salt or lime juice as desired.

                Serve the chicken mixture over rice or tortillas, garnished with fresh cilantro and slices of avocado.
