In a large mixing bowl, combine the cut sweet potatoes with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss until all the fries are evenly coated.
Sprinkle the cornstarch over the sweet potato mixture and toss again until all fries are well coated. This will help achieve the crispiness you're looking for.
Spread the sweet potato fries in a single layer on the prepared baking sheet, making sure they are not overcrowded (you may need to bake in batches).
Bake in the preheated oven for 25-30 minutes, turning the fries halfway through to ensure even cooking and browning. Bake until crisp and golden brown.
Remove from the oven and let them cool for a few minutes. Serve hot and enjoy!
