Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, combine the trimmed and halved Brussels sprouts with olive oil, minced garlic, salt, and black pepper. Toss well to ensure the sprouts are evenly coated.
Spread the Brussels sprouts in a single layer on the prepared baking sheet.
Roast in the preheated oven for 15 minutes. After 15 minutes, remove the baking sheet and sprinkle the grated Parmesan cheese over the Brussels sprouts.
Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the Brussels sprouts are crispy and golden.
Once done, remove from the oven and zest some lemon over the top for a fresh flavor.
Drizzle with balsamic glaze and garnish with chopped fresh parsley.
Serve warm, and enjoy your crunchy, flavorful dish!
