Method
Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil. Place a wire rack on top of the baking sheet for optimal crispiness.
Prepare Wings: Pat the chicken wings dry with paper towels to remove excess moisture. This ensures they become crispy when baked.
Make Dry Rub: In a mixing bowl, combine baking powder, salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and dried oregano. Mix well until all ingredients are evenly blended.
Coat Wings: Place the dried wings in a large bowl and drizzle with olive oil. Sprinkle the dry rub mixture over the wings and toss well until all the wings are evenly coated.
Arrange Wings: Lay the coated wings in a single layer on the wire rack. Ensure there is space between each wing for air circulation.
Bake: Place the baking sheet in the preheated oven and bake for about 40-45 minutes, turning the wings halfway through to ensure even crisping. You want them deeply golden and crispy.
Cool & Serve: Once baked, remove the wings from the oven and let them cool slightly for about 5 minutes before serving.
