Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper.
Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
Add the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
Add the fresh spinach and stir until wilted.
Pour in the heavy cream while stirring, then add the grated Parmesan cheese and Italian seasoning. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
Return the chicken breasts to the skillet, spooning the creamy sauce over them. Let it simmer for 2 more minutes.
Taste and adjust seasoning with salt and pepper if necessary.
Serve hot, garnished with fresh basil leaves.
