Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Once hot, add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the pan and set them aside.
Prepare the Garlic: In the same skillet, reduce the heat to low and add the minced garlic. Sauté for about 30 seconds, or until fragrant but not browned.
Make the Sauce: Pour in the chicken broth and let it simmer for 2 minutes. Then, gradually stir in the heavy cream, mixing well until combined. Allow the sauce to simmer for another 3-5 minutes until it thickens slightly.
Season and Add Spinach: Stir in the red pepper flakes (if using), lemon juice, and season with salt and pepper to taste. Add the fresh spinach to the sauce, cooking until wilted, about 1-2 minutes.
Combine Shrimp and Sauce: Return the cooked shrimp back to the skillet, tossing them in the creamy sauce until fully coated. Heat through for another 2-3 minutes.
Serve: Once everything is well combined and heated, remove from heat and garnish with fresh parsley.
