Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt, pepper, and dried Italian herbs. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Prepare the Garlic Sauce: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn it.
Create the Creamy Base: Pour in the chicken broth and let it simmer for a couple of minutes. Slowly add the heavy cream and stir to combine. Allow the sauce to simmer on low heat for about 3-4 minutes, allowing it to thicken slightly.
Combine Everything: Add the cooked chicken back into the skillet along with the cooked penne pasta. Stir in the grated Parmesan cheese, mixing well until the pasta and chicken are coated in the creamy garlic sauce.
Season and Garnish: Taste and adjust the seasoning with salt and pepper as needed. Remove from heat and garnish with freshly chopped parsley.
