Instructions
In a large skillet, heat the ghee (or butter) over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.
Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
Add the garam masala, cumin, turmeric, and cayenne pepper to the skillet. Cook for about 1 minute, stirring constantly to allow the spices to bloom.
Transfer the spice and onion mixture to the slow cooker and add the chicken pieces, ensuring they are coated well.
Pour in the tomato sauce, coconut milk, and brown sugar. Stir gently to combine, season with salt to taste.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
Before serving, give the curry a good stir and adjust seasoning if necessary.
Serve over basmati rice or with naan, garnished with fresh cilantro.
