Begin by seasoning the chicken breasts on both sides with Cajun seasoning, salt, and black pepper.
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the diced onion and bell peppers. Sauté for about 3-4 minutes until softened. Then, stir in the minced garlic and cook for another minute until fragrant.
Pour in the chicken broth and bring to a simmer, scraping any brown bits off the bottom of the skillet.
Stir in the diced tomatoes, heavy cream, and smoked paprika. Let the mixture simmer for about 5 minutes to thicken slightly.
Return the chicken breasts to the skillet, spooning the creamy sauce over them. Simmer for an additional 2-3 minutes to heat through.
Adjust seasoning to taste, adding more salt and black pepper if needed.
Garnish with chopped fresh parsley before serving.
