In a large pitcher, combine the cranberry juice, grated ginger, honey, and lime juice. Stir well to ensure the honey has dissolved completely.
Allow the mixture to sit at room temperature for about 30 minutes to let the flavors meld.
After 30 minutes, strain the mixture through a fine mesh sieve into a new pitcher to remove pieces of ginger and solid cranberry pulp.
Just before serving, add the sparkling water to the strained juice and stir gently to combine, preserving the bubbles.
Fill glasses with ice cubes, pour the cranberry ginger punch over the ice, and add a handful of fresh cranberries for garnish.
Top each glass with a few fresh mint leaves for an aromatic touch.
