Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to cool the pasta quickly.
In a large mixing bowl, combine the cooled pasta, cherry tomatoes, sweet corn, red bell pepper, black beans, red onion, and bacon (if using).
In a separate small bowl, whisk together the ranch dressing, lime juice, salt, and pepper to create the dressing.
Pour the dressing over the pasta mixture and gently toss until everything is evenly coated.
Add the shredded cheddar cheese and chopped cilantro to the salad and toss gently again to combine.
Taste and adjust the seasoning with additional salt and pepper, if desired.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
