In a medium bowl, combine the buttermilk and chicken pieces. Mix well and let it marinate for at least 30 minutes (up to 4 hours in the refrigerator for deeper flavor).
In a separate bowl, whisk together the flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
Heat about 1 inch of peanut oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C).
Remove the chicken from the buttermilk, allowing the excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.
Carefully drop the coated chicken nuggets into the hot oil, frying in batches to avoid overcrowding. Cook for about 3-4 minutes per side, or until golden brown and fully cooked.
Once cooked, transfer the nuggets to a paper towel-lined plate to drain excess oil.
Serve hot with your favorite dipping sauces or alongside a refreshing side salad.
