Preheat your oven to 375°F (190°C).
In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Heat olive oil in a large oven-safe skillet over medium heat. Add the red onion and bell peppers, cooking until softened, about 3-4 minutes.
Add the spinach and cherry tomatoes to the skillet, stirring until the spinach wilts, about 2 minutes.
Pour the egg mixture over the vegetables in the skillet, ensuring it evenly covers all ingredients.
Sprinkle the crumbled feta cheese on top of the egg mixture.
Cook on the stovetop for about 3-4 minutes until the edges start to set, then transfer the skillet to the preheated oven.
Bake for 15-20 minutes or until the frittata is puffed up and a knife inserted into the center comes out clean.
Once done, remove from the oven and let it cool for a few minutes before slicing.
Optionally, garnish with fresh basil leaves before serving.
