In a medium saucepan, combine the water, 2 tablespoons of sugar, salt, and vegetable oil. Bring to a boil over medium heat.
Once boiling, remove the pan from heat and stir in the flour until a smooth dough forms.
Allow the dough to cool for a few minutes, then add the eggs and vanilla extract. Mix well until fully incorporated and smooth.
Transfer the dough into a piping bag fitted with a star-shaped nozzle.
In a deep frying pan or pot, heat oil over medium heat (approximately 350°F or 175°C).
Pipe strips of dough (about 6 inches long) directly into the hot oil, cutting with scissors as needed. Fry until golden brown, about 2-3 minutes per side.
Use a slotted spoon to remove the churros and place them on a plate lined with paper towels to absorb excess oil.
In a shallow dish, combine 1 cup of granulated sugar and ground cinnamon. Roll the warm churros in this mixture until well coated.
Serve immediately for the best taste!
