Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
Open the cans of cinnamon rolls and cut each roll into quarters. Place the pieces evenly in the greased baking dish, spread them out to ensure even cooking.
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and brown sugar until well combined.
Pour the egg mixture evenly over the cinnamon roll pieces in the baking dish, ensuring each piece is coated.
If using, sprinkle the chopped pecans over the top for added crunch and flavor.
Bake in the preheated oven for 25-30 minutes, or until the casserole is set and golden brown on top. A toothpick inserted should come out clean.
Once baked, remove from the oven and let it cool for a few minutes before drizzling with maple syrup.
