Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Arrange the baguette slices on the baking sheet and brush one side lightly with olive oil.
Bake the bread slices in the preheated oven for about 5-7 minutes, or until they are golden and crisp. Remove and let them cool slightly.
In a mixing bowl, combine the cherry tomatoes, mozzarella balls, chopped basil, sun-dried tomatoes, minced garlic, and 2 tablespoons of olive oil. Season with salt and pepper to taste.
Spoon the tomato and mozzarella mixture onto the toasted side of each baguette slice.
Arrange the bruschetta on a large serving platter in a circular wreath shape, overlapping them slightly to create a festive appearance.
Drizzle the balsamic glaze over the top of the wreath and add additional olive oil if desired.
Garnish with fresh parsley around the edges for a pop of color, and serve immediately.
