Method
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined. Set aside.
In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
Mix in the vanilla extract and milk, combining well.
Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.
Gently fold in the mini chocolate chips until evenly distributed throughout the dough.
Using a small cookie scoop or your hands, form the dough into small bite-sized balls and place them on a baking sheet lined with parchment paper.
Freeze the cookie dough balls for about 30 minutes, until firm.
Meanwhile, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
Dip each frozen cookie dough ball into the melted chocolate, ensuring they are entirely coated. Return them to the parchment-lined baking sheet.
If desired, sprinkle a few mini chocolate chips on top of the coated dough bites before the chocolate hardens.
Place the cookie dough bites back in the freezer for another 15-20 minutes to allow the chocolate to set.
