chickpeas, drained and rinsed

ripe
avocado, diced
1
cup
cherry tomatoes, halved
1
cucumber, diced
1/2
red onion, finely chopped
1/2
cup
crumbled feta cheese
1/4
cup
fresh parsley, chopped

tablespoons
olive oil

tablespoon
lemon juice
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the drained chickpeas, diced avocado, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
Gently fold in the crumbled feta cheese and chopped parsley, being careful not to mush the avocado.
In a small bowl, whisk together the olive oil and lemon juice. Pour this dressing over the salad mixture.
Season with salt and pepper to taste. Gently toss everything together until well combined.
If time allows, let the salad rest in the refrigerator for about 15 minutes to allow the flavors to meld.
Notes
Serve chilled for the best flavor.
