Method
Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.
In a large bowl, combine the sliced zucchinis, halved cherry tomatoes, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.
In another bowl, beat the eggs and then stir in the mozzarella cheese, Parmesan cheese, and breadcrumbs until the mixture is unified.
Add the cheesy egg mixture to the zucchini mixture and mix until the zucchinis are well coated.
Pour the combined mixture into the prepared baking dish, spreading it evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the zucchinis are tender.
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
