Instructions
In a large mixing bowl, combine the chilled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, and egg. Mix until all the ingredients are well combined.
Add the flour, garlic powder, onion powder, salt, and pepper into the bowl. Stir until the mixture becomes a sticky dough.
Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into balls.
Roll each ball in breadcrumbs until fully coated. Place them on a parchment-lined baking sheet.
If frying: In a large skillet, heat oil over medium heat. Fry the potato puffs in batches for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels. If baking: Preheat your oven to 400°F (200°C). Spray the puffs with cooking spray, then bake for 20-25 minutes, or until golden brown and crisp.
Serve warm with your choice of dipping sauce, such as sour cream or a spicy aioli.
