Instructions
Preheat your oven to 400°F (200°C).
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the diced chicken breasts to the skillet, seasoning with salt, pepper, and dried Italian herbs. Cook until the chicken is no longer pink and is cooked through, about 6-8 minutes.
In a large baking dish, layer half of the zucchini slices at the bottom.
Spread the cooked chicken mixture evenly over the zucchini.
Add the halved cherry tomatoes on top of the chicken.
Layer the remaining zucchini slices over the tomatoes, then sprinkle with the mozzarella and Parmesan cheeses evenly.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Once baked, let it cool slightly before serving. Garnish with fresh basil if desired.
