Method
In a mixing bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, cream cheese, diced bell peppers, diced onion, and taco seasoning. Mix until all ingredients are well combined.
Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
Place one tortilla in the skillet and spread half of the chicken and cheese mixture evenly over half of the tortilla.
Fold the tortilla in half, covering the filling, and cook for about 3-4 minutes until the bottom is golden brown.
Carefully flip the quesadilla and cook the other side for another 3-4 minutes until the cheese is melted and the tortilla is crispy.
Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling mixture, adding the remaining olive oil to the skillet as needed.
Once all quesadillas are cooked, slice them into wedges and serve hot with sour cream and salsa on the side.
