Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
Use a knife to cut a large 'X' into the center of each slice of bread, creating a small well for the egg. Ensure you do not cut completely through the bread.
Place the slices of bread on the prepared baking sheet. Brush the tops and edges with olive oil or melted butter.
Carefully crack an egg into the well of each slice of bread, taking care not to break the yolks.
In a mixing bowl, combine the shredded mozzarella, grated Parmesan, garlic powder, oregano, red pepper flakes (if using), salt, and pepper. Mix well.
Spoon the cheese mixture generously over each egg in the bread wells, letting it spill over slightly.
Bake in the preheated oven for 15 to 20 minutes, or until the egg whites are set but the yolks are still runny, and the cheese is bubbly and golden.
Once baked, carefully remove from the oven and let cool for a couple of minutes. Garnish with freshly chopped chives or parsley before serving.
