1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, diced

1 cup cherry tomatoes, halved

1 lime, juiced

Fresh cilantro, chopped, for garnish

Prepare the Cauliflower Rice: Remove the leaves and stem from the cauliflower and cut it into smaller florets. Using a food processor, pulse the florets until they resemble rice grains. Alternatively, you can use a box grater.

    Cook the Cauliflower Rice: In a large skillet, heat the olive oil over medium heat. Add the riced cauliflower, garlic powder, paprika, salt, and pepper. Sauté for 5-7 minutes, stirring occasionally, until slightly tender yet still retaining a bit of crunch.

      Add Vegetables: Stir in the black beans, corn, and diced red bell pepper into the skillet with the cauliflower rice. Cook for an additional 3-4 minutes until heated through and the vegetables are soft but still vibrant.
