In a large mixing bowl, combine the rolled oats, almond flour, grated carrots, and shredded coconut. Mix well.
In a separate bowl, whisk together the honey (or maple syrup), cinnamon, nutmeg, allspice, and a pinch of salt until well blended.
Pour the wet mixture into the dry ingredients, and add the chopped walnuts and raisins if using. Stir thoroughly until everything is combined and forms a sticky mixture.
Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls (around 1 inch in diameter).
Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
Once set, enjoy immediately or store them in an airtight container in the fridge for up to a week.
