Instructions
In a large pot, heat the olive oil over medium heat. Add the cubed chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.
In the same pot, add the chopped onion, garlic, and green bell pepper. Sauté for 3-4 minutes until the vegetables are softened.
Add the cannellini beans, diced green chilies, chicken broth, Cajun seasoning, cumin, oregano, salt, and pepper to the pot. Stir well to combine.
Return the browned chicken to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, allowing the flavors to meld.
Stir in the corn kernels and lime juice, and cook for an additional 5 minutes until heated through.
Taste the chili and adjust the seasoning as needed.
Serve hot, garnished with chopped cilantro, and offer sour cream and shredded cheese on the side if desired.
