Method
In a large mixing bowl, combine the shredded chicken and Buffalo sauce. Mix well until the chicken is evenly coated.
In another bowl, blend the softened cream cheese, ranch dressing, and shredded cheddar until smooth and creamy.
Lay a flour tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture over the entire tortilla, leaving about a half-inch border around the edges.
Spoon a portion of the Buffalo chicken mixture down the center of the tortilla. Sprinkle some chopped green onions on top.
Carefully roll the tortilla tightly from one end to the other, ensuring the filling stays inside. Repeat this for the remaining tortillas.
Once all tortillas are rolled, slice each roll-up into bite-sized pieces, about 1-2 inches thick.
Arrange the roll-ups on a serving platter and garnish with fresh lettuce leaves and celery sticks around the edges.
