Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until a smooth batter forms.
Dip each cauliflower floret into the batter, allowing any excess to drip off, then place them on the parchment-lined baking sheet.
Bake the battered cauliflower florets in the preheated oven for about 20 minutes or until they are golden and crispy.
While the florets are baking, mix the buffalo sauce with olive oil in a separate bowl to create a spicy sauce.
Once the cauliflower bites are done baking, remove them from the oven and drizzle the buffalo sauce mixture over the florets, tossing lightly to coat evenly.
Return the coated cauliflower bites to the oven and bake for another 10-15 minutes, until they are crispy and the sauce is well-incorporated.
Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
