Instructions
Preheat your oven according to the brownie mix package instructions. Prepare a baking dish as directed (typically greasing or lining with parchment).
In a large mixing bowl, combine the brownie mix with the required ingredients (usually eggs, oil, and water). Mix until just combined.
Pour the brownie batter into the prepared baking dish and bake according to the package instructions or until a toothpick inserted comes out with moist crumbs. Let cool completely.
While the brownies are cooling, in another bowl, mix the whipped cream cheese, vanilla extract, and powdered sugar until smooth.
Once the brownies are completely cooled, crumble them into small pieces in a large bowl.
Mix in the cherry pie filling gently, ensuring not to mash the cherries.
With your hands, form small balls (about 1-inch in diameter) from the brownie mixture. Press them firmly to hold together.
Once shaped, place the brownie balls on a lined tray and freeze for about 30 minutes to firm them up.
Meanwhile, melt the dark chocolate chips in a microwave or using a double boiler, stirring until smooth.
Remove the brownie balls from the freezer; dip them into the melted chocolate, making sure they are fully coated. Return them to the tray.
For an added crunch, sprinkle chopped nuts over the chocolate before it sets.
Refrigerate the dipped brownie bombs until the chocolate hardens (about 15-20 minutes).
Serve chilled, topped with a dollop of whipped cream and a fresh cherry or mint leaf for garnish.
