Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
In a large mixing bowl, combine the grated zucchini, honey, vegetable oil, eggs, and vanilla extract. Mix well until all wet ingredients are fully blended.
In another bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg until combined.
Gradually add the dry ingredient mixture to the wet ingredients, stirring gently to combine. Do not over-mix — it’s perfectly fine if the batter is slightly lumpy.
Fold in the chopped walnuts and raisins or chocolate chips if using.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, let the zucchini bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
