Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery, and cook until the vegetables are softened, about 5 minutes. Stir in the minced garlic and sauté for an additional 1 minute until fragrant.
Add the Tomatoes and Seasonings: Pour in the diced tomatoes (with their juice), vegetable broth, and tomato paste. Stir in Worcestershire sauce, Cajun seasoning, dried thyme, and smoked paprika. Season the mixture with salt and pepper to taste.
Simmer the Sauce: Bring the mixture to a simmer and reduce the heat to low. Allow it to simmer for about 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
Cook the Shrimp: Add the peeled and deveined shrimp to the skillet. Cook for an additional 5-7 minutes or until the shrimp turn pink and are fully cooked.
Serve: Once cooked, taste the sauce and adjust the seasoning if necessary. Serve the Shrimp Creole over a bed of cooked white rice and garnish with sliced green onions.
