Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the sliced peaches with 1/2 cup of sugar, lemon juice, cinnamon, and cornstarch. Toss to coat the peaches evenly. Set aside to let the mixture marinate for about 15 minutes.
In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt.
Pour in the milk, melted butter, and vanilla extract. Mix until the batter is smooth and combined.
Pour the batter into a greased 9x13 inch baking dish.
Carefully spoon the marinated peach mixture over the batter. Do not stir; the batter will rise around the peaches as it bakes.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the batter comes out clean.
Allow the cobbler to cool for at least 15 minutes before serving.
